Lost question: How did Locke go from being Helen’s boyfriend to her customer?

I just got into the tv show Lost and I’ve watched up until the fourth episode of season 2. I’m confused because in season 1 Locke was talking to Helen on the phone and she said she wasn’t allowed to see customers. Then in season 2 we go back farther and find that they’ve already seen each other multiple times. I don’t mind spoilers; could somebody please tell me how their relationship changed so drastically?

Does the dictum ,”the customer is always right,” enter into your acting choices?
